2 cups Cherry Tomatoes or Regular Ripe Tomatoes, chopped
1 clove Garlic, minced
2 tbsp Cane Vinegar
1 tbsp raw sugar
To Taste Salt and Pepper
Procedure
In a shallow frypan, heat the olive oil and sauté your garlic and tomatoes over medium heat. Simmer for 2-3 minutes or until the tomatoes are softened. Toss occasionally and slightly mash the tomatoes breaking it down into chunks and releasing the tomatoes juice.
Deglaze the pan with vinegar. Add the sugar and add salt and pepper to taste
Keep the sauce chunky and can be served while still hot. Best served with tortang talong, lumpiang shanghai and fried chicken.
