A lover of fusion dishes, Maputing Cooking Chris Urbano gives his take on Filipino recipe picadillo – a Spanish-Mexican influenced dish that has been adapted to the Philippines culinary landscape over the years!
Picadillo is as a more savory / salty dish, with just a little sweetness coming from the use of carrots and peas in the dish. Filipinos also tend add substance serving it with boiled quail eggs and banana chips for a sweet kick.
In this new Maputing Cooking episode, the Tagalog speaking Australian chef will teach you how to cook picadillo! So delicious and perfect for a steaming hot cup of rice, this savory Filipino dish will be your favorite!
It’s super easy and quick to make, and that’s not just the best part of it – you can use leftovers as an impromptu filling for tortang talong, or empanadas! (As if there are going to be leftovers!)
- 2 tbsp cooking oil
- 2 tbsp garlic, chopped
- ½ cup onion, chopped
- ½ cup tomatoes, chopped
- ½ kilo ground beef
- 2 tbsp tomato paste
- 1 cup potatoes, diced
- 1 ½ cup beef broth
- 2 pcs bay leaf
- ¼ cup fish sauce
- 1 cup carrots, diced
- ¼ cup green peas
- 12 pcs hard boiled quail eggs
- 50 grams banana chips
- To Taste salt and pepper
- In a shallow frypan, heat the oil and sauté the garlic, onion, and tomatoes until fragrant. Add in the ground beef and cook until brown.
- Add in the tomato paste, bay leaf, and potatoes and carrots. Pour in the water and fish sauce and simmer for 10 minutes.
- Add the green peas, and quail eggs and simmer it for another 5 minutes.
- Season with salt and pepper to get desired taste. Serve it hot with cooked rice. Garnish with a little onion leeks or parsley if you have some on hand.
