On the Flip Side: Filipino Recipes for Filipinos | Chef Laudico’s Book Launch

Filipino cuisine is no ordinary cuisine; ask the most revered chefs in the world, and they would say that it is the next big thing in the world of Asian culinary arts. This is why it’s no wonder a lot of foreigners fell in love with our food and become its greatest ambassadors in the world stage. Just like “foreignoy” Chef Chris Urbano. He has been cooking and sharing Filipino food recipes ever since he started his YouTube channel Maputing Cooking.

And when it comes to Filipino food and cooking shows, the name Chef Laudico must not be new to you. Chef Rolando Laudico, a celebrity chef, endorser, and “culinary rockstar”, along with his wife Chef Jacqueline Laudico have launched their new cookbook and Team Maputing Cooking is just glad to be a part of it!

Chef Lau and Chef Jac started cooking at the age of 7 and 5 years old respectively, and fell in love with it ever since. For them, cooking Filipino food the right way will change everything. He mentioned three key things in making good Pinoy food:

  • Make it from scratch like how the ancestors and grandmothers make them,
  • avoid using MSG, and
  • level up your recipes by putting a little bit of your own twist in it.

At the book launch, we were fortunate enough to know their culinary journey which made them advocates of Filipino food.

While Chef Lau was studying culinary in France, one of his foreigner classmates mentioned that he knew what Filipino adobo tastes like and describes it as “it sucks”- it’s too oily and sour for him. When Chef Lau heard this, he told himself that he’s going to promote Filipino food. “There will always be a wrong Chinese food, wrong Italian food…”, said the Laudicos.

Making Filipino Food Twists

The Laudicos’ book has an amazing concept. The traditional dish is written in each recipe and if you flip it upside down, you can see how they made their own twists in it.

Some of the dishes in the book were served such as pancit palabok, fried kangkong leaves with tomatoes and shrimp on top, and Pinoy bistek that uses real steak as meat. These dishes are some of the most common loved Filipino food that was given a cool twist by the two chefs.

Taking Filipino Food Global

The Laudicos and Chris Urbano curiously share the same mission: to bring Filipino food global. The Laudicos know that Filipino food will definitely go a long way and it is already starting to happen. Filipino restaurants owned by Filipinos are starting to sprout in different parts of the world serving Filipino classics sisig, adobo, and sinigang.

For Chef Lau, lechon and kinilaw are also two of the dishes that could make it on the global stage. “We need to be proud of our food,” said Chef Lau. It’s one of the key things that Filipinos need to do to be able to showcase the recipes on a global stage.

How hard could it be to get to know the roots of Filipino food, its taste, and how to cook it, right? If a foreigner like Chris Urbano believes in it, you as a Filipino should too!

As Chef Lau said, “Forever we will do Filipino cuisine because that’s who we are”.
